Father's Day and My First Post

Today is June 19, 2011 - Father's Day here in the USA. My dad has been a superb teacher and mentor for every year I have been on this earth. I wouldn't trade him for anyone else. That being said, frankly, he could eat a little healthier. Whenever I visit my parents' house, I typically bring over some fresh fruits to cut up and place in the refrigerator, and I'll try to secretly trash the junk food.

My duty for this Father's Day was to come to the house and make dad's dinner. He got cornbread as a starter, his favorite fish as the main dish, and chocolate cupcakes for dessert.


They look innocent enough. In fact, they were fantastic! Light, fluffy, shockingly sweet, and on the healthy side. Healthy, you ask? These cupcakes are Chocolate Chip Zucchini Cupcakes. You can't find any evidence of the vegetable when looking closely and you sure can't taste the zucchini.

Of course I want to make my father happy on Dad's Day. Unfortunately, he hates zucchini. So did I tell him about the health food that found its way into the cupcake? Nope. Must have slipped my mind. I closely watched as he took his first bite, hoping he couldn't detect any foul play. Perhaps I'll tell him about the zucchini tomorrow. For now, I believe my job of making dad happy on Father's Day while trying to watch out for his diet was a success. I want him to be around for the day that I actually have a kid or two. And you'd better believe that I plan on using this recipe in order to get my future kiddos to consume some veggies.
